Our founder, Ash, spent years working in the worlds of art and fashion, where caviar seemed to appear at nearly every celebration. Curious whether the experience could be reimagined through plants, she began experimenting in her home kitchen. What followed was a collaboration with chefs, food scientists and research partners to perfect every detail.
